Alumnus back on campus as traveling chef

COLUMBUS, Miss. – Mississippi University for Women alumnus Joe Wallace ’00 was back on campus serving up a bit of German cuisine.

Wallace, who graduated from the first class of MUW’s Culinary Arts Institute, prepared the menu for Thursday’s international station which featured items such as braised red cabbage with pork, dumplings and apple strudel.

“We hope diners will be able to get an experience from a cuisine that they have never seen before,” he said.

Roger Busby, Sodexo Dining Services general manager, added, “The Traveling Chef is just one of the many programs Sodexo does to not only change up the daily dining experience but it is hoped that it opens up to our students and guests a way to experience other cuisines from around the world.

As a district chef for Mississippi and parts of Arkansas with Sodexo Dining Services, Wallace and 24 other chefs travel to about 100 locations per year.

When he is not participating in The Traveling Chef showcase, Wallace can be found on the campus of Itawamba Community College where he has worked as executive chef for the past seven years.
